Since it’s fall and unfortunately colder weather is upon us, I thought I would share my Zuppa Toscana recipe since I made it last night, along with my super easy chicken alfredo flatbread.
I tend to find recipes online and then create my own variation. I will admit I found this one online several years ago, but have changed it quite a bit to make it my own. Pair it with pizza, flatbread, pasta and definitely breadsticks and you won’t need to go back to Olive Garden anytime soon (especially since they sell their dressing in stores now!)
3-4 medium size potatoes
1/4 – 1/2 white or yellow onion
48oz chicken broth
1 cup whipping cream
3 garlic cloves
2-3 HOT Italian sausage links (I use Johnsonville HOT and Spicy Brats)
Pour broth in large pot and set on medium high. Begin slicing potatoes into thin (but not too thin or they’ll turn into mush) slices and drop in the broth.
Chop onion into fine pieces and add to broth. Add garlic cloves (use a press for best results). Add a sprinkle of garlic salt and some pepper for flavor and allow to simmer while potatoes soften for 20-30 minutes.
You can add additional spices if you’d like. I usually add garlic powder, onion powder, salt and sometimes oregano.
Cook Italian sausage links (I always take the skin off first) and finely chop. I usually use 21/2 links so that I can get two batches of soup out of a package since they are $6!! Some people like the sausage more than I do also, so feel free to add more.
Add to the soup. NOTE: Pour all sausage grease in the soup with the sausage, it adds flavor!
Add whipping cream and chopped kale (a cup or so) and stir soup.
Serve with breadsticks, salad with Olive Garden dressing and your main dish and it will be just like you’re at Olive Garden. We can usually make this soup last about 3 meals for two people, but I think one batch would serve 4-6 at once.
SUPER EASY Chicken Flatbread
I LOVE making this flatbread because it’s cheap and doesn’t take very long.
Mama Mia Thin and Crispy crust (found in the weird little pizza ingredients section but NOT sold at Schnuck’s).2-3 chicken breast (either grilled or baked)
Simply spread alfredo sauce like pizza sauce on the crust, add chopped chicken, cheese, spinach, spices and whatever other ingredients would be good to you, bake at 400 degrees for 10 minutes, or until crispy and BOOM you have dinner!
